Apple Cast Iron Pankakes





Apple mix
2-3 Apples peeled cored and sliced.
4-5 Tbs. Brown Sugar
1Tbs. cinnamon
Optional; Pinch of Nutmeg, or vanilla extract
1/2-1 Tbs. lemon juice

Batter
3 eggs
1 1/4C flour
2 C milk
Dash salt
4-5 Tbs. Butter

Mix batter in Blender, put aside.
Stir apple mixture to coat apples
Pre-heat oven with a #9 Skillet or 2 #5 Skillets or 5 #3 Skillets in it (375°). When hot (30min at temp) , pull a skillet out and melt butter quickly in pan and add apple mixture and fry 30 to 45 seconds. Arrange the apple mixture to cover the bottom of the pan and then pour batter in over the apples -only fill 2/3rd full, otherwise you’ll have a mess. Return the pan to the oven, repeat till last skillet filled, and bake 30-40 min till puffed in the center.
Remove, flip onto plate and serve. If you want extra richness with maple syrup.
